Summer Squash and Basil

My family absolutely loves basil! It has such an amazing flavor! It was super delicious in the Cantaloupe Basil infused water we made just the other day, and in this recipe for Summer Squash and Basil Pasta, it doesn’t disappoint either.

While our not so secret ingredient for the Summer Squash and Basil is, ta-da! –basil,  ithas a few flaws- at least in its fresh form.

It’s only good for a brief time, it burns and bitters easily, and it’s difficult to get the basil flavor into every bite without also coating the basil leaves.

So, to fix this, we’re going to be using my basil essential oil to stand in for leaves. This way we give just the right amount of flavor to every bit of food.

INGREDIENTS

  • ¼ cup olive oil
  • 8 garlic cloves, thinly sliced
  • 2 pounds assorted summer squashes and zucchini, quartered lengthwise, sliced
  • Himalayan Sea Salt
  • 12 ounces Ziti, or another large tube pasta
  • 2 ounces Parmesan, grated (about ½ cup), plus more for serving
  • 1 tablespoon fresh lemon juice

 

 

RECIPE PREPARATION

  • Heat oil in a large skillet over medium. Saute garlic, stirring occasionally, until very lightly browned around the edges (about 4 minutes).

    Add squash, and season with salt to taste. Cook the squash and garlic, tossing occasionally, until squash begins to soften, 12–15 minutes. Remove from heat and add black pepper vitality.

  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until very al dente.

  • Transfer pasta to skillet using a slotted spoon adding only ½ cup pasta cooking liquid.

    Cook pasta, adding 2 oz. Parmesan in stages along with more pasta cooking liquid as needed, until sauce coats pasta. Toss in lemon juice and lastly, the basil vitality.

  • Divide pasta among bowls and top with more Parmesan.
