When I originally posted this Lemony Peas recipe from the Young Living Blog, it was still wet and dreary out. Not that it’s not today, but at least today it’s a warm, summer rain coming down- the very best kind. I’ve always LOVED summers in the south, though I know the humidity isn’t for everyone. Makes me want one of those Strawberry Lavender Spritzers we talked about making a couple of weeks back- YUM! But in returning to topic-
Today’s spotlight on oil isn’t on Lavender, and it’s not a strawberry day, but a day for the vegetable lover within all of us- no matter how deep it may be buried, I assure you. It’s about LEMON. Specifically, LEMON VITALITY, through Young Living.
With summer just around the corner,do you ever start wishing sides like the typical plate of broccoli or kale didn’t taste so, well, green?
And don’t get me wrong, I LOVE me some veggies!
But as spring draws to a close, and the summer months come upon the horizon, something that tastes more like sunshine yellow seems in order.
Herein, we welcome LEMONY PEAS! A side of green, with a taste of yellow- LEMONS!
- 2 Tbsp E.V.O.O.
- 2 Cups Frozen Peas, Thawed and Drained
- 2-3 Drops Lemon Vitality
- Salt to Taste
Heat olive oil over medium heat. Once hot, add peas.
Cook until softened, approximately 3-5 minutes (yes, it’s just that quick!)
Once softened, remove from heat.
Add a dash of salt (more or less, depending on preference) and 2-3 drops of Lemon Vitality.
And that’s it! You’re done!
Now go enjoy the rest of your evening, resting assured that your family and guests alike will enjoy this pleasant dish!
